Hearty Vegan Bread

I love me some bread every now and then, but it’s gotta be clean and it’s gotta be vegan. I found a recipe and mixed it up a bit for ingredients I had in the house – the real recipe can be found on http://www.healthy girl kitchen.com.

I used chickpea, spelt and buck wheat flours. This was the first time I’ve used physillium husk, and wow – it’s amazing! Mixed with water, it basically becomes the “wet” ingredient that creates the dough, mind blowing! This was all quite simple, just mix the dry with the wet, knead until you get the doughy texture, shape the bread then bake. I topped mine with some “everything” seasoning.

The consistency is a bit “heavy” so a little piece goes a long way. Next time I’ll add in some caraway seeds to get a little bit of a rye bread flavor, but you can add in anything, even dried cranberries, maybe even add some bananas to the mixture to get a banana bread? Simple, clean and perfect for avocado toast or even just some vegan butter on top!
