Vegan Queso es so good!

This vegan queso…hits.the.spot! (See the ingredient list at the bottom of this post!)

Chop 1/2 yellow onion. Melt 2 tablespoons of vegan butter in a sauce pan, and sauté the onions until they are translucent. In the meantime, prepare your spice blend, 1.5 teaspoon Cumin, 1 teaspoon smoked paprika, 1 teaspoon Chile power, 3 tablespoons chickpea flour.

Next, put the following ingredients in a blender: 1 package silken tofu, 2 tablespoons tofutti sour cream, 2 tablespoons Follow Your Heart feta crumbles, 1 tablespoon minced garlic, 1/4 cup nutritional yeast and blend this until it is smooth. Once smooth, add the onion mixture to the tofu blend, and blend again. Also, give it a taste, to make it “cheesier” you may want to add more nutritional yeast.

Now, place about 2 tablespoons of avocado oil in the same saucepan you removed the onions from. Put this on medium heat. Slowly stir in the spice mixture, stirring constantly. Once it is all in the sauce pan, continue to stir until it you can smell the aromas, it will be clumpy!

Into the same sauce pan, slowly pour in 1/2 cup of vegetable broth, continue to stir until the mixture is smooth. Now, throw in one chopped tomato with it’s juices, along with 1 chopped jalapeño, or it’s perfectly fine to use organic jarred jalapeños.

Next, you’re ready to transfer the tofu blend into the sauce pan with all the other ingredients. Stir in, and let all that simmer for 5 minutes, stirring every few minutes. Give it a taste every few minutes and add in more spices if you think it needs it. A little salt and pepper at the end is nice, and if you like spice add more jalapeño and even sriracha would work! Add a few slices of avocado to dress it up and add some healthy fat.

Veggies are perfect for dipping this queso along with tempeh, but you can use whatever you prefer! It can be served hot, warm or cold!

  • Tofu (organic/non MGO preferred)
  • Vegan Sour cream (Tofutti)
  • Vegan Feta crumbles (Follow Your Heart)
  • Chickpea flour
  • Nutritional yeast (Braggs)
  • Vegan Butter (Miyoko’s)
  • Vegetable broth or cubes to make your own
  • Avocado Oil (or other healthy oil)
  • Minced garlic (fresh or jarred)
  • 1/2 Yellow Onion chopped
  • Jalapeños (fresh or organic jarred)
  • 1 Tomato
  • Avocado (up to you)
  • Smoked paprika
  • Ground Cumin
  • Chile Powder
  • Salt/Pepper
  • Veggies/Bread/Whatever you want as dippers!
  • A healthy “bread” alternative for the non-vegan in the family, they will appreciate it! Even though they say the healthy dip is amazing! 🙂
