Protein Packed Plant Based Bowl

Best part about this dish…step mom’s tomato marmalade! To die for!!

Oh and I forgot – the mung bean and organic black wild rice…oh, and the Brussels!!!

I prepared the rice and mung beans just to al dente, you don’t want to cook out ALL of the nutrients!

I “marinated” the Brussels Sprouts, sliced white onion and walnuts in…like I said… step moms tomato marmalade I received today – so amazing! Not sure of the recipe but I’m sure there’s lots of sugar and maybe some cinnamon and or nutmeg in there, but it’s also a little earthy so tastes so good for me! In any case – the rest of the dish is so clean – and it’s the holidays – I will indulge!!

Mung beans are one of the BEST sources of plant based proteins with 49 grams per 1 cup!! You can get so much more protein from plants then you imagine – think about it – WHAT DOES AN OX EAT, one of the strongest animals on earth?? 😉
