
Bursting with flavor and packed with nutrition – this kale cesar salad is so addicting!!!
One of my favorite things is a good cashew dressing – it can be made so many different ways.
For Cesar dressing:
- 1 cup raw cashews soaked in 1 cup water for at least 5 hours
- 2 garlic cloves
- 3 tablespoons nutritional yeast
- 1 tablespoon capers
- 1 teaspoon Worcestershire sauce
- 1 whole lemon squeezed
Blend until smooth, adjusting flavors to your personal taste.
For the salad ingredients:
- Prepare 1.5 cup red lentil pasta
- Clean and chop 1.5 cup each Romain lettuce and kale
- 1/4 cup shaved purple onion
- 1.5 cups edamame shelled and prepared
- 1/2 cup chopped cucumber (seeded)
- 1/4 cup vegan Parmesan
Mix all salad ingredients together. Toss in the dressing and coat thoroughly.
Plate and top with fresh black pepper. Enjoy to your hearts delight – it’s packed with protein (edamame and red lentil pasta pack a punch!) and a much healthier then the original version!!
