
Powering up this morning with this crafty little tartine. Not your typical spread, I used protein packed mashed edamame in place of avocado, topped with tomato and sprouts and topped it all off with these crunchy little cauliflower crumbs!

This was quite the find at my local grocery store, believe it or not (in case you have forgotten, I’m in the US Virgin Islands). Cauli Crunch is a crumb that can be used so many ways! I sprinkle on my salads, on top of my tartine, in my tofu scrambles, I toss my vegetables in them before putting them in the convection oven for a little crunch, etc…so many uses! All natural and perfectly good for you!
