
I’ve been feeling a little under the weather lately and I thought that a big bowl of soup would help. And there’s nothing like a little curry to get things moving in your system!
This was so quick, anybody can do it! All I did was sauté some chopped cauliflower, white onion and sweet potato, along with about an inch of finely chopped Ginger in just a tiny bit of avocado oil. At the same time I boiled about 3 cups of vegetable stock and added in curry powder and some additional cumin and garlic powder. On the side I was also boiling the rice noodles.
When the vegetable sauté was done I put that into the vegetable stock and let that simmer for another three or four minutes.Take everything off the heat and spoon some soup into the bottom of the bowl, then add some rice noodles, and then top again with more of the soup. I always like to get my greens so in between the layers I actually added some spinach, baby kale and sweet pea shoots, and then also topped the layer of noodles with a little bit more.
This literally took 15 minutes, and it’s so filling!
