Stay healthy when you’re hangry!

The only way to do it is to arm yourself with healthy ingredients! I literally thought I had nothing to make a healthy dinner with tonight, and then realized if I’m creative I have all I need to make a quick and simple but delectable meal!

I knew I had black bean or black lentil pasta on hand (can’t remember, I unpackaged everything as it enters my house!)

And I also knew I had some cherry tomatoes on the verge of going bad – so I made my own stewed tomatoes to serve as a sauce. Easy peasy – olive oil, tomatoes, salt, pepper, 1 teaspoon each of oregano and thyme, 4 cloves garlic chopped and I added in 1/4 cup Chardonnay. Bring all of this to a vigorous boil then simmer for 10 minutes.

I steamed some cauliflower and edamame – and also cooked the noodles while the simmering was going on.

Next, add all the ingredients in one bowl and mix up well. Transfer to your serving dish and top with vegan Parmesan cheese.
