Za’atar is a (DELICIOUS) spice from the Middle East…and I’ve just discovered it!
The recipes can differ but in general it’s a combination of dried oregano, thyme, and/or marjoram (woodsy and floral), with sumac (tangy and acidic) and toasted sesame seeds (nutty and rich). My blend consists of marjoram, sesame, chickpea. Salt, mint, coriander, Anis and Cumin.

All I did was sauté cauliflower, sliced button mushrooms, 1 Cubanelle pepper from the garden and 1/4 block of tofu in avocado oil, and a heavy sprinkle of za’atar, maybe 3 teaspoons.
I love my sprouts so I decide to plate this as a bowl with a good heaping mound!
Next place the mixture on top then top with truffle oil and another dash of the za’atar. I topped with some black sesame seeds.
I would never have thought to use all these spices in combination – so now I know! Za’atar is very comforting and leaves you craving more!!! Give it a try!
