Amazing meatless taco filling

This amazing meat alternative to your traditional meat taco stuffing is delicious and so simple to make a batch!

First, I chopped 1.5 cup mushrooms, 1 cup green onions, 1 cup carrots, 1 whole jalapeño, 1/2 cup cauliflower, 1/2 of a red pepper – very fine. Sauté the mixture in avocado oil, and add a dash of salt, for approximately five minutes. Next add in organic tomato sauce with no sugar added. Let this sauté for another minute or two. Add in one and a half cups of texturized vegetable protein (TVP). Mix this in well then add the following spices, about 1-1.5 tablespoons each – garlic powder, onion powder, chili powder, cumin, and turmeric. Next add 1 teaspoon each of celery salt, red pepper flakes and cayenne pepper.Turn the heat down and let this all sit for about 10 minutes so the TVP can re-hydrate and the flavors develop. Voila! 

One batch makes enough for dinner….
