Vegan meat tacos!

Wow this is delish! I was inspired yesterday reading the ingredients of the “neat meat” package. So I made my own version!

1 cup each raw pecans and cashews blended into a paste. 1/2 yellow onion, grated. 1/2 jalapeño with a few seeds for heat very finely chopped. 6-8 baby Bella mushrooms blended to a paste.

Sauté the onions and nut mix in avocado oil for 4 minutes. Add in the mushrooms and jalapeño and let this sauté for another 3 minutes. Add in your spices – garlic powder, onion powder, cardamom, ground cumin, fenugreek, chipotle jalapeño powder, Chili powder, salt and pepper. Let this all cook, stirring frequently, for about 5 minutes.

Once this “meat” is done, take a heaping spoonful and add to a nice big piece of lettuce to make a wrap. Top with whatever you like – I used tomato, green onion, tofutti sour cream and sprouts.
