
This dish is honor of my Trini friends! An authentic Indian curry takes hours to make…..ah eh able! 😉 Not sure how close this will be, but it doesn’t matter – it makes me happy to think of them all!

Soooo….sauté carrots, onions and radish in avocado oil and a pinch of salt until slightly soft. Pour in some coconut milk, then add in the spices…cumin powder, turmeric, a little garlic, cumin seed, pinch of paprika, five spice powder and fenugreek. Let this simmer for about 3 minutes. Now cube up your tofu, add to the mixture and let sauté for about 5-8 minutes.
I used cauliflower rice as my base. I coated a cashew wrap with avocado oil then sprinkled on the garlic powder, cumin and turmeric. Then topped with almond cheese.
Delish. Simple. Quick. And added bonus – makes me think of the people I miss so much!! So fun to sit back and watch a funny Trini slang video on YouTube and LMAO. 😘
