Moroccan Tofu

Moroccan Tofu is on the menu! Sometimes I walk thru the grocery store, pick up a packaged meal and become inspired. I go home and make it myself – the CLEAN version!

Simmer 1 bottle of Organic tomato sauce and 1/2 cup water. Add seasonings to taste: garlic powder, fenugreek, onion powder, salt, pepper, red pepper flakes, cumin, cardamom. Add 2 tablespoons Worcestershire sauce. Let this all simmer for a few minutes. In the meantime chop fresh chives, mint and basil, and prep to add 2 cups fresh spinach. Crumble 3/4 of a block of soft tofu into the “soup” mixture. Let this simmer for another 5 minutes. Now add in all of the spinach and most of the fresh herbs, keeping some behind to sprinkle on top. Ladle soup into a bowl. I topped mine with left over couscous and the fresh herbs. SIMPLE. CLEAN. CUISINE!!!
