Italiano buddha bowl!

Ok…so I had a glasses of wine 😉 and decided to tackle the extra basil and mint growing on my windowsill. How about a pesto?

So I took a bunch of leaves from both and threw them in the Ninja along with frozen cashews, pecans and walnuts, a little bit of water and let it blend. Made an AMAZING pesto!

I sautéed carrots in avocado oil, then added the red pepper, next the tofu and finally the kale – off the heat to sweat the kale. Once it was bright green I added the pesto and put the combo back on medium heat for just a few seconds.

I plated this in a bowl with sprouts (because I love them) and tomatoes from the garden.

I had no idea what to expect, but, if I am honest, I pulled all the ingredients back out – and made a second round. And then I had another glass of wine.

SOOO GOOOD!!!!
