
Chickpeas are a nutritional powerhouse packed with protein, fiber, selenium, calcium, iron, potassium, magnesium, and antioxidants. Chick peas help lower cholesterol, and have choline which helps improve mental health.
My favorite way to prepare chickpeas is by taking 1.5 cups dry peas, placing them in a pot of 4 cups of distilled water. Let these soak for 8-12 hours. Once soft, drain the water and then refill the pot with clean water, just enough to cover about 1 inch above the peas this time. You can also use vegetable broth. I also add in a dash of salt and sometimes season them with garlic and onion powder.
Once they’re done, let them cool for about an hour and then package them up in a glass container to store in the refrigerator. They last for about a week and can be used in other dishes (this morning I made a mash and used it on toast with arugula!) or simply as a grab and go snack. Simple clean cuisine!
