Breakfast for champs!

If you’re gonna eat, you should do your best to make your meals are as nutritious as possible! I also try to plan ahead – I know today is filled with activities, a good doggy walk this morning and paddle boarding this afternoon. I want to make sure I’m fueled up! This kale and tofu scramble with sautéed yucca and avocado truffle dip is perfecto!

Kale is rich in chlorophyll, vitamin K for bone and vascular health, antioxidants like zeaxanthin and lutein, collagen-boosting nutrients like vitamin C, as well as beta-carotene for strong joints and vibrant skin. Kale is also a great source of fiber to support healthy gut bacteria, a crucial component of immune support.

Yucca is a nutritional powerhouse! I had no idea how good it is for me until I did some research.
