Japchae

Craving a light, spicy dish tonight – and Japchae is perfect!

Japchae is simply a Korean stir fry with rice noodles. Traditional vegetables are white onion, carrot, red pepper, shiitake mushrooms and bok choy. All but the bok choy are sautéed quick, don’t overcook, in sesame oil. We are talking maybe 3 minutes.

While cooking, put together the sauce, 1/2 cup Tamari, 3 tablespoons rice wine vinegar, 1 tablespoon garlic chili paste and 2 tablespoons water. I had to add about 1/2 tablespoon of agave – that chili paste is hohohot!

When the noodles are done, fold them into the veggies mixture and add the sauce. Now add the bok choy and cook for another minute until it starts to wilt.

Remove from heat and plate. Top with some toasted sesame seeds and serve!
