You should always eat the most colorful vegetables you can find and try to limit cooking as much as you can – to get the most nutrients from them!

Why use white cabbage when there is purple and why cook everything when it’s just (or more) flavorful raw!?!
For dinner tonight I settled on these super nutritious raw purple cabbage wraps. Filled with peppers, green onion, cilantro, tomato, black beans (cooked of course), and cucumbers all soaked in some lime juice, salt and pepper, garlic powder and cumin.
I did whip up some temphe for some extra protein and topped the wraps with a few pieces each, an avocado slice and jalapeño slivers. We had some left over rice and beans from Mexican night on Friday so I warmed some of up to have on the side. 
How did you cook the tempeh?

Hi!!! Cut into bite size pieces, sauté
in algae oil (or olive or avocado…), add a dash of salt, pepper, garlic powder and onion powder. Let it get a little brown and crispy – maybe 4 minutes.
