
We are planning on a 4 mile walk this morning so I’m allowed to carb it up a bit!
But even so, this version of French Toast is still so much healthier then the popular version.
First I ground 2.5 tablespoons chia seeds. Then add in 1/2 tablespoon each of cinnamon and vanilla extract. Next about 1 cup cashew milk. Mix all this well. It will be a a little thick so you have to smear a thin layer on the Ezekiel bread (each side) as opposed to soaking. Lightly oil a pan (I use Thrive algae oil) and cook on each side for about 2 minutes.
Then I topped with some mixed berries and a mint sprig. Very filling and very nutritious!
