
Hubby was craving Oyster Stew today. Okie dokie….new challenge.
First of all, the original recipe is quite simple, but very dirty! Oysters, milk, butter, salt, pepper and maybe a splash of Tabasco. EASY TO VEGAN!
Substitute oyster mushrooms for the oysters, cashew milk for whole cow milk, vegan butter for pasteurized dairy butter and add in some organic sherry wine to capture that savory umami flavor of the “real” thing. Don’t forget the dash of salt and pepper and the hot sauce. I also added a dash of cayenne pepper to garnish.
It didn’t taste exactly the same but it was definitely close. An obvious cleaner version to be appreciated if you are trying to go plant based.
