
One of my favorite foods as a kid was Spaghetti O’s! Wouldn’t touch them with a 10′ pole today – until I opened a can of organic tomato sauce yesterday and was instantly reminded of them! The flavor, all by itself, was almost spot on!
Now most people would say “Spaghetti O’s are “plant based” so pop open a can!” And while they might be acceptable for vegetarians, they certainly aren’t clean – they contain a ton of sugar and a lot of other ingredients I can’t pronounce.
So, I thought – this is an EASY one to perfect! 2 cans organic tomato sauce, 1/2 tablespoon each of onion and garlic powder, a pinch of salt and pepper. 1 tablespoon agave. For the O’s you ask?? Spiralized a zucchini then pulled out only the parts without skin and chopped these into 1/2″ pieces. Throw this in the pot of sauce and let cook on medium or low for about 5 minutes.
Pick a little basil to garnish and garlic. Not only is this so simple to make but tomatoes are the major dietary source of the antioxidant Lycopene, which has been linked to many health benefits, including reduced risk of heart disease and cancer. They are also a great source of vitamin C, potassium, folate, and vitamin K.
