
Breakfast is my least favorite meal of the day and here’s why. I am STARVING when I wake up but I don’t like the feeling of being weighted down first thing in the morning. But, I also realize I am very active, usually running or lifting weights every day – or both – so I know I need to fuel up!
This red lentil and pear bowl is the perfect solution. Definitely filling but all good for me! Lentils are PACKED with protein, are rich in iron and low in calories. Pears are rich in antioxidants and dietary fiber, and are fat and cholesterol free. Fresh mint from the potted garden is a delicious addition that improves brain function and digestive symptoms.
A tiny sprinkle of salt and squeeze of agave on top – this is a great start to the morning!
