
I never knew these could be so delish and a great texture. I actually think carrot ribbons are my new zoodles!
All I did was thinly shave a medium carrot with a peeler then piled them up in a steamer with a dash of salt for about 3 minutes. Then I added in about a cup of spinach to make sure I got in my greens!

I used leftover veggie bolognese sauce to top and quickly toasted an almond wrap with a pinch of garlic for dipping.
Perfectly nutritious comfort food!!
