Cauliflower with Avocado Lime purée

Simply delish! The lime zest really makes this dish!

One of my favorite things is baked cauliflower! I just always forget how long it takes to cook to get really tender. Give yourself at least 30 mins on 375 for 1/2 a medium sized head. I rub mine with some algae oil and salt and pepper the pop it in the convection oven.

While that was cooking I whipped up the purée – 1/2 Haas Avocado, dash of salt and pepper, 1 tblsp avocado oil, the juice of 1/2 lime, a half handful of shelled edamame, about 1/4 cup water. I also a little pinch of minced garlic.

I was preparing steamed carrots for the hubby’s dinner so I snuck a few, tossed them in algae oil with a pinch of salt and dill weed. I also grabbed some shelled edamame from the freezer to steam and add to the plate for a little bit of protein.

Once the cauliflower was done I simply platted it all adding a big dollop of purée to the bottom and an extra dish on the side! The lime zest on the carrots and purée added a special touch. So YUM!!!!!
