Veggie Ceviche

Had a big lunch today so craving something small but satisfying. This veggie ceviche hit the spot and it was so quick and simple to put together!

All I did was chop 1 small tomato, seeds and juices removed, a handful of garden grown small sweet peppers ( 1/2 regular pepper is fine) 2 spring onions, 1 big cauliflower cluster or about 1/4 cup. 1/4 of a large avocado or 1/2 of a whole one. (In the Caribbean avocados are pretty big!!) A half handful of cilantro from the garden and a small amount of mint. Blend all of this and squeeze in the juice of 1 and a half limes. Add salt and pepper to taste.

Next, I quickly sautéed my cashew wraps in a tiny bit of algae oil to make the chips. 2 wraps was all I needed!

You can do this. So easy and perfectly good for you!
