It’s just a simple salad!

I mean, it’s not as simple as throwing vegetables in a bowl – but it’s super quick and definitely takes the salad experience up a notch!

First, I took a handful of rough chopped red peppers and tossed them in a sauce pan with organic olive oil – a quick spin, just soften them up a bit, maybe 3 mins. When done lay them on a paper towel to cool. Next add a handful of cauliflower and carrots, chopped, to the pan and add some salt, pepper, and turmeric for seasoning, and a squeeze of 1/2 lemon. Sauté for about 3 mins – keeping them a little crisp. When done also let these cool.

Next I made the dressing – 3 tblsp Balsamic vinegar, 2 tblsp organic olive oil, 1 tblsp water, then season to taste with salt, pepper, garlic powder and onion powder. Mix this into your lettuce blend (your choice here).

Top the lettuce with the veggies you prepared, I also added cucumber, avocado, pecans and a little bit of sauerkraut.

This salad is really nutritious and filling! Perfect dinner after a busy day! Not a lot of time so more time to veg out! (🤔🤗)
