Simple decisions, healthy stir fry!

As usual, a drink after work led to talks about “who is hungry, where should we go eat?” Of course, the gang elected the place they thought I would at least consider….because they have tofu! Lol! 🙋🏽‍♀️ Little did they know, that I know, that that tofu, as delicious as it is, is loaded with sugars and salt (it’s BBQ and likely even fried). So in the back of my mind I had a different plan, and I was dreaming of all the vegetables I have in my refrigerator!

So of course I declined to go, and I ran home, played with my dogs and then began my simple stirfry!

All I did was chop all the veggies in the fridge (I usually do this on Friday, but tomorrow is Valentine’s Day so that means dinner out 😬 and one less day I have until the produce goes bad!) I also added in a bit of tofu I had on standby-by. What I love about this dish is that all I used to sauté the vegetables in is a tiny bit of algae oil and Tamari. And instead of white rice, I used red lentils – cooked a little al dente. I drizzled about 1/2 tablespoon of sesame oil – so yummy!!

I can’t tell you how good it feels to sit and eat a healthy meal when it was so easy to be tempted to go out and compromise!
