Feeble attempt at Rice Paper Wraps!

I have tried this dish soooo many times – this is probably one of my best so far, and it is sad looking – but tastes soooo good!

You can really probably add whatever vegetables you would like to these lettuce wraps but I used what Chef Cynthia Louise recommends (chttps://www.chefcynthialouise.com/blog/recipes/how-to-make-fresh-rice-paper-rolls) carrots, cucumbers, red peppers, lettuce, cilantro and mint. oh, and I used organic red rice as opposed to rice noodles.

The rice wraps are the tricky part, you have to soak them in warm water and then be able to manage them, which I have a hard time with! But, if your luck is better than mine, you simply soak the wraps, lay them on your tray, put the ingredients in and wrap them up!

The dipping sauce is just a quick mixture of sesame oil, tahini, balsamic vinaigrette, and a pinch of salt, pepper.

These are a healthy, nutritious meal! I wish I didn’t eat them all so I had left overs for lunch tomorrow!
