Big Green Bowl

Wow – probably one of my favorite so far inspired by Chef Cynthia Louise (https://www.chefcynthialouise.com/). She’s amazing.

For dinner tonight and lunch tomorrow – a Big Green Bowl.

In a steamer place some broccoli, cauliflower, leeks, edamame, the white of bok choy, button mushrooms, and a handful of spinach or kale, and I used the greens of the bok choy. Before steaming add a pinch of salt and pepper.

While that’s cooking (3 mins max!) mix up a quick dressing of 2 tbsp Braggs apple cider vinegar, 1.5 tbsp thrive algae oil, 1.5 tbs honey and salt and pepper. Also chop up some cabbage.

Grab a big bowl or plate and pull everything out of the steamer. Place the raw cabbage in the mix, and toss in a few olives. I also topped mine with some sprouted mung beans and a handful of raw pumpkin seeds.

This seems like just a dish of vegetables but it is SO MUCH MORE! All of the flavors are so crisp and clean and the dressing adds bright flavor. Awesome. Love it. Will make this again and again.
