You Cannellini make this tart!

Nary an avocado to be found on island – but that won’t stop me from making this quick nutritious breakfast! I replaced the avocado on this toast with left over cannellini beans. I’m loving these breakfast “tarts,” an idea I stole from a raw food restaurant in NYC.

My version today is Ezekiel toast, canelli beans smashed and also some whole, arugula, sprouts and some cherry tomatoes. A sprinkle of salt and pepper. Quick, simple and full of vitamins, minerals and plant based protein!
