
Soy is a staple in my diet, because it’s one of the best sources of plant based protein. Today I need an extra boost because I’m hitting the gym for a full body workout.
I created this tofu stack off the cuff this am. First I drained the tofu and let it sit for a bit to get as much moisture out as possible. I wrapped it in towel and placed a heavy glass on top to speed the process. 
Next, cut the tofu in strips or cubes, drench both sides with leftover chickpea liquid and then coat in a mixture of hemp seeds, dill, salt, pepper, onion powder and garlic granulas. 

Place the tofu in the air fryer for 10 minutes, flipping halfway thru to crisp up both sides.
While that’s cooking sauté some spinach in a little bit of algae oil and a sprinkle of salt.
Stack the tofu with layers of spinach in between. Now, let’s keep that gut healthy and top with, my fav, sauerkraut!
This nutritious breakfast will keep you going all day!
