
Taking a glimpse into my day…I don’t think I looked up from my desk once today, other then to down my chickpea pasta leftovers from last night. Something about the first week and a half of every month has me craving carbs!!! Could it be the stress related to payroll, invoicing and end of month reconciliations??
I rush home to reset, and immediately think – PIZZA! And, I’m even open to making a husband worthy version. (first of course, he must eat and it’s so much easier!)

So for my healthy version I just used an almond wrap as the crust, organic tomato sauce, Diaya “mozzarella” cheese and GoVeggie Parmesan. My fav pizza toppings are peppers and onions, but I also added some cauliflower. Also a pinch of garlic salt (be careful here!) and onion powder.


The second best part of this dish is the little side arugula and spinach salad with Canneli and Edamame beans (hello protein!) with a very light truffle lime vinaigrette.
