
This amazing little bundle of joy is sweet and spicy and packed with nutrition!
I put a special twist on this lettuce wrap by adding golden beets for earthiness, mango chutney marinated Tofu for the sweet and jalapeño/cucumber salsa for the heat.

Purple cabbage adds great texture and helps keep the wrap together. The other veggies are broccoli, Brussel Sprouts and green onion. All of which were only quickly sautéed in a tiny bit of algae oil and fresh juice from 1/2 lime. Heat vegetables enough to get warm but keep the crispness.

You can add any veggies you like to a lettuce wrap. To maintain the most vitamins and nutritional value remember to keep veggies as raw as possible by only slightly cooking them – you’ll get used to the crisper texture the more you do this, and actually prefer it over “mushy” veggies. Also, pick things with the brightest or deepest colors as opposed to white or light veggies. You can add these in but really over do it on the colorful veggies to get the biggest nutritional bang for your buck!!
