Salute to the Salt Combos!

Like many beverages and condiments these days, I’ve discovered that salt has joined the world of combining flavors! I’m aware that this trend might have been around for quite a while now, but now it’s is more available to us common folk, or home cooks I would say! Anyway, I’ve been using a variety of these salts to spruce up everything from eggs to avocado mash and tonight used several varieties in my chick pea bean bowl!

This recipe was so simple. All you do is slowly cook off your beans but instead of using water I  used vegetable broth and added a sprinkle of each of our salts you see above excluding truffle – because I save that favorite of mine is for special occasions! Let that simmer for at least 2 hours. Then, simply chop then broil a red pepper adding a sprinkle of one of your favorite salts and a dash of pepper. While that broiles, sauté a few broccoli sprigs in a tablespoon of Earth Balance “butter”, adding as much minced garlic as you like, and add in a squeeze of lemon and lime juice. If your broccoli needs more moisture to sauté, ladle in some of the water from the chickpea boil.

Ladle some beans with the broth into a bowl and place the peppers and broccoli on top. You see the results above – this is a healthy meal full of protein and very flavorful!!
