Cold Caribbean Fruit Soup

A cross between an ice cream and a pudding – this blend of fruits is as healthy as it is delicious! Blend 1/2 frozen banana, 1/4 fresh mango, a squeeze of organic lemon juice, 3 ice cubes and 1/4 cup fresh local coconut water. Place in freezer for about 5 minutes. Crush 3 raw almonds and 3 raw walnuts. Go to your guilty closet and take 3 plantain chips out of your stash. Add 2 mint leaves to the fruit mixture and blend again, 2-3 quick pulses. Top with a few slices of fresh mango, the three plaintain chips to give just that touch of salt, and the crushed raw nuts. Now sit back, relax and enjoy!!!
