This is probably the quickest, simplest, most satisfying meal I’ve made yet! I have to admit, I keep a stash of “zoodles” in the fridge that I prepare on Sunday’s -which really cuts down on the prep time.
But this is the easiest comfort food to indulge in. All it takes is 2 tablespoons of olive oil, sauté 1.5 tablespoons of garlic, a sprinkle of red pepper for some heat, a handful of mushrooms (any type works!), and then toss in your zoodles. For the sauce, I used 1/4 cup of Trader Joe’s red pepper spread, but any sauce you prefer will do. Once this is all blended I top with 1/4 cup Almond cheese, turn the burner off, cover and let sit for a minute to melt.
So quick and simple. This version is under 250 calories! Enjoy!!
