Simply sweet salmon


So the salmon in this dish isn’t sweet, but the mango, raisins and coconut sautéed in the brussels sprouts sure are! I had a mango hanging around and right after a workout I crave something fresh. I also knew I would need to tone down the sweetness, just a bit, so I tossed in some golden raisins for a slightly savory layer. I added in a bit of cabbage, and a hint of onion and garlic powder – making this the perfect complimentary side dish to the chili lime seasoned broiled sockeye salmon.
