It’s cold in Florida today so I was so excited when I remembered this Jamaican curry I have. I kept this really clean by substituting the meat with tempeh. I had some asparagus on hand so I threw that in, and to add some extra heat – chopped jalapeños. Califia unsweetened almond milk is perfect for creating that warm creamy sauce, and the sautéed bean sprouts added an extra earthy crunchy layer! Just want I needed on Florida winter day!
