French “twisted” onion soup

I’ve really out done myself this time! I don’t know why, but I have been craving French onion soup – minus the big scary crouton and all that cheese!!  So I mulled over how I could make a clean version, ran to Target and bought some organic vegetable broth and got started! I had 1/2 a red onion, 1/2 of a yellow onion, a bunch of green onion (so I used the whites of 4 of these) and some mushrooms – what the heck, I said this was a “twisted” version! I sliced and threw all those ingredients in the crock pot for the afternoon. I added some onion powder, garlic, salt and pepper, to taste – then I needed to sweeten it up a bit so I stirred in about 2 tablespoons of light organic agave. 


When the onions became the soft texture you want for soup, I placed the soup in a bowl. I substituted the crouton for a 1/4 slice of extra firm tofu, and then topped that with vegan non dairy Parmesan cheese. I am not kidding you, this is BETTER then the non-twisted version!  And it’s super simple and clean!!! Pair it with a nice kale salad with a soft boiled egg – perfect!
