Sometimes I don’t even plan a recipie, I just grab the veggies out of the fridge that I know are going to spoil first and either bake or sauté them. Prepared “substance” on hand helps keep you clean because you can add it to any meal!

Today I crushed it at the gym – there’s nothing better then coming home and being able to nourish my body quickly! I simply topped some fresh spinach with baked beets, onion and portabella mushrooms, and 1/2 of a chicken breast. I added a drizzle of lime and avocado vinaigrette and voila! A simple clean healthy meal in minutes!
These earthy flavors go so well together. I added a drizzle of olive oil and honey to the beets and onion slices, along with some garlic. For the portabellas I added squeezed a lemon juice, olive oil and fresh dill. The chicken breast was baked as well with just a dusting of salt and pepper. My avocado and lime dressing also included about 1/4 cup white wine, 1/4 cup water, a pinch of salt and pepper and a tablespoon of orange citrus Italian seasoning.
