Don’t knock it until you try it. Tofu is so versatile, it hardly has a taste so you can turn it into whatever you are in the mood for! Add a little ghee (clarified butter) and some tomato basil spice and voila! Perfect scrambled “eggs.” To top it off I added almond mozzarella (The only cheese alternative I have found that actually melts!) and siracha. I recently discovered delicata squash – the perfect food. It’s flavor reminds you of sweet potato and corn! Leave the skin on when you cook it (bake or sauté), it melts in your mouth!
