Roasted cauliflower & edamame lettuce wrap

This is probably one of my favorite meals, inspired by Bar Taco in Hyde Park, Tampa Florida. I’ve added a twist with the edamame and quinoa.  So it’s really simple – layer two pieces of Bibb lettuce (when you use 2 it won’t fall apart!) with roasted cauliflower, a few shelled edamame, about 2 tablespoons of quinoa and some fresh pepper. These ingredients alone are great, but sometimes I add a tomato & red pepper marinara sauce for some added flavor and creaminess! So simple, yummy and good for you!!
