Feeling green and clean! 

I love healthy veggie bowls, they are so easy to keep clean!  I went into this recipies using the KISS approach once again – focusing on green vegtables takes the thinking out of it!  

If it’s green, grab it!!

Here are the veggies I used: 1 zucchini, 1/2 green pepper, a handful of green beans and 2 celery stalks.  I imagine kale, spinach, broccoli or asparagus would make this dish even better, but I just got home from traveling and those things weren’t on hand.  Spiralize the zucchini and chop the other ingredients however you like!

Sauté everything but the zucchini in 1 tbsp of ghee, get a nice crisp on the veggies then and add in a tablespoon of garlic, a cup and a half of organic vegetable broth and 1 cup of organic pressed coconut. Add 2 tbsp of chopped basil or even just a basil seasoning, add a teaspoon of red pepper flakes, if you like a hint of spice.  I also added a tbsp of organic honey and a squeeze of 1/4 lime for a little hint of sweet and sour. I also added a sliced organic chicken sausage, but it’s not even necessary.

Once all the ingredients are sautéed well, throw in the zucchini spirals and mix them in for about 3 minutes, long enough for them to soften.

Place the ingredients in a beautiful bowl, giving yourself enough sauce to make it “soupy.”  Top with a few pistachio nuts and some fresh pepper. Delish!! And I have left overs for work tomorrow. Happy Monday!
