This soup is perfectly clean, and oh so yummy!
I can’t describe it, it’s fresh, earthy and vibrant all at once!
Here is what you need:
1 package of vegetables for a stir fry, with broccoli & snap peas
1 organic chicken sausage (optional) – you can use any meat you are comfortable with, really
2 eggs
Vegetable broth, I use the Swanson box
4-5 mushrooms, sliced thin
1/4 purple onion, sliced thin
1/4 jicama, sliced thin
1/4 cup Liquid Aminos
2 tablespoons Chile/lime spice
Bring the vegetable broth to a boil, add in the Liquid Aminos and all of the vegetables and spices, except the jicama. Reduce to medium heat and let cook for 5 minutes, take off the heat after 5 minutes. In the meantime, sauté the chicken sausage in a separate pan. At the same time, poach the eggs. When the chicken and egg are done, separate the soup mixture into 2 bowls, add the chicken, sliced jicama and then place a poached egg on top. Sprinkle some of the Chile/lime seasoning on top. Ohhhh so good!!
