
I think being a “Chopped”-o-holic is paying off!
I came home starving and grabbed the first few things I saw in the fridge and a protein from the freezer and BANG, and amazing meal!
This was so easy………..here goes:
Chop 1.5 cups of broccoli and green beans.
Chop 1/2 cup of radish and green onion.
Prepare (thaw, peel) a dozen or so shrimp, depending on size.
Prepare a Homemade Honey Mustard Balsamic Dressing: 2.5 tbsp Dijon mustard, 2.5 tbsp honey, 3 tbsp balsamic vinegar, 1 teaspoon each of garlic and onion power, pepper to taste. Shake well to combine all ingredients.
Place the broccoli & green beans in the wok and saute for 3 minutes. At the same time, add the shrimp to a steamer and cook until done. Add the radish, green onions and coleslaw mix to the wok and saute until just cooked – you don’t want it to soggy so under-cook by a minute, it’s going to sit for a few minutes and continue to steam/cook.
Transfer the vegetable saute to a bowl. Place the shrimp in the wok – just to achieve a nice little sear on them, maybe 1 minute on each side. Add 3/4 of the Honey Mustard Balsamic Dressing to the vegetables and stir.
Place 2 cups of the vegetable saute onto your serving dish and top with the shrimp. Drizzle some extra dressing on top of the shrimp. For a hint of heat dress the plate with some Sriracha Hot Sauce and celery tops for a garnish. Now enjoy!
