Simple, delicious chicken & veggie lettuce wraps

This is a common clean meal, but my recipe is unique and really simple!

When I tell you my recipes, realize that I’m cooking for two, in general…

2 chicken breasts – rubbed lightly with olive oil, sprinkled with cumin, garlic powder, onion powder, chili power and pepper.  Bake these for 30 minutes at 350 (cut open to make sure they are done, all of our ovens are different!)

Finely chop 1 cup celery & 1 cup carrots, 1/2 of a pepper (yellow, red, green, any work…even jalapeño!), 1 large radish, add minced garlic (as much as you like).  I recommend the Cuisinart hand held device shown (found it at Bed, Bath and Beyond) for chopping.  Put all this in a pan and cook for 8-10 minutes to get the water out. The texture will become more like a breading, you want this.

Pull the chicken out of the oven, let it cool for a few minutes.

While you are waiting for the chicken, quickly blend together 1/2 of an avocado with 1/2 of a lime.  I always add 2 tablespoons of cilantro.

Chop the chicken, add to the vegetable mixture, cook this for about 5 minutes, just to get the flavors blended.

Prepare your lettuce wrap, I use bibb lettuce.  ALWAYS use two pieces of lettuce, we all know it tears and makes the idea of eating lettuce wraps less appealing.  Using 2 solves this problem!  Add 2-3 slices of fresh tomato and chopped green onion.

Add the chicken and veggie mixture, along with the avocado-lime spread.  Top with extra cilantro.
