
A simple soup made clean.
Believe it or not, there are few ingredients in the traditional recipe that aren’t good for you. But let’s not focus on that, let’s just learn the clean way.
Bake a full chicken, then debone it. Chop a few ingredients, about a cup each of green pepper, carrots, yellow onion and 1/2 of a jalapeño pepper. My special secret is adding green beans in place of the corn (us humans lack the digestive enzymes to break down the corn that is used in traditional recipes). Adding fresh green beans brings the sweetness and a little crunch back in. Sautee these in a table spoon of olive oil, add 1 tablespoon each of cumin, garlic and onion powder. Once simmered nicely, put these ingredients into the crock-pot, along with your previously home-made stewed tomatoes (sorry, I forgot to take the picture before I added them, I’ll load my recipe later). Add 1 box of organic chicken or beef stock. If you need it, add a pinch of salt.
Traditional recipe’s call for tortilla chips….hence the name. We’re going to substitute spiralized carrots. Gives you the crunch you desire without the guilt!
